Pina Colada Cupcakes - A Summer Time Necessity

Now I know summer is taking an awfully long time to rear its sunny head, but I do feel that sunshine, seaside and late night swims are just around the corner.

In order to start prepping for such magnificent times, I've been thinking about the ultimate summer baked treat: The Pina Colada Cupcake. Many years ago my friend baked the most moreish pina colada cupcakes. They were sweet but fresh, dense but not heavy and the coconut rum cream cheese frosting was out of this world. I've never forgotten them (clearly!) but she lost the recipe! To say it strained the friendship, would be a fair assessment but we have worked through the ordeal and come to a better understanding.

Since then, I've scoured the internet, searched far and wide, and this recipe from The Crumby Kitchen is the closest to the ones my dear friend made all those years ago. Perfect for those summer days, hopefully coming soon, ahead. Oh, and if you need some fluted baking cups for this recipe... I know a gal :)
