Mama Michele's Easy Peasy Chocolate Sauce Recipe

As a treat, every Sunday after lunch, my mom would get the vanilla ice-cream out of the freezer and stir up the most delicious chocolate sauce to go with it. It was the perfect decadence to end off a tasty meal. I absolutely adored her chocolate sauce and to this day, I don't think I've tasted better. The sauce is silky, rich and chocolaty without being too sweet. And, to make it even better, it's super easy and simple to make. Just be careful, once you start, you may never stop.

Ingredients

  • 1/3 cup butter
  • 1/3 cup sugar
  • 1 slab dark 85% Lindt chocolate
  • 1 carton of cream
  • 1 tbsp of instant coffee (you can add a little bit of boiling water and mix if you like)
  • 1/3 cup Sherry
  • 1 tsp vanilla essence

Directions

  1. Melt the butter, sugar, chocolate, cream and coffee over a saucepan.
  2. When the sugar has melted, bring the sauce to boil and let it boil uncovered on a low heat for 7 minutes. The key here is for 7 minutes exactly. No more, no less.
  3. Remove from heat and add the sherry and vanilla essence. Stir.
  4. Pour over your ice-cream, or any dessert really, and let the yummy happiness follow suit.
  5. Cover with cling wrap and this chocolate sauce can be stored in the fridge for up to two weeks.
